Why We Love It: This soy sauce is unlike any soy sauce we’ve tried, even compared to other black bean soy sauces from Taiwan (see our post comparing Gluten-Free Soy Sauces, including black bean soy sauce). While most typical soy sauces are made from yellow soybeans, those made from black soybeans (which up until now we’ve only seen in Taiwan) are known to be higher quality and and have no need for added wheat. The texture of Maruso’s sauce is thick, almost like a glaze, and the flavor is more complex than your typical soy sauce, not to mention it’s got the added kick of heat from the ghost chili pepper. This is delicious as a sauce or seasoning for stir-frys or other dishes.

Meet the Makers: Maruso Soy Sauce is produced by Wuan Chuang Food, Inc. Located in the famous soy sauce producing town of Shiluo, Taiwan, this company was founded as the Maruso Soy Sauce Company in 1909, during Japan’s colonization of Taiwan. The company has remained in the family for generations, passing from sons to grandsons. At the end of World War II, after the Chinese gained autonomy of the island, the company name was changed to the Wuan Chuang Foods, Inc. Maruso’s soy sauce is micro-brewed in terra cotta pots in Taiwan from US grown non-GMO soy beans.
