School and work lunches don’t have to be boring! Sandwiches are the perfect transportable lunch – a compact collection of the components of one meal, all in a hand-held format. And there’s a lot of opportunity for creativity with them – from the fillings, toppings and sauces, to the bread or outer wrapping that holds it all together. Here are some creative ideas for sandwiches, with options for various dietary restrictions!
Vegan BLAT with coconut bacon. A vegan twist on the classic sandwich with crispy smokey salty coconut bacon and avocado added for good measure.
Gluten-free Seaweed Wrap. Wrap it up with superfood seaweed – it’s thin, has a light texture, an almost undetectable flavor, and is high in minerals like iodine and known to have anti-inflammatory qualities. Seaweed sheets are available in most Asian markets (and even non-Asian markets now). Just spread them with your favorite condiment as you would a wrap and roll up your fillings!
Gluten-free Eggplant Burger. Swap out your bun for thick slices of eggplant that have been roasted with a bit of salt and pepper. You’ll be amazed at how hearty they are and how much flavor they add to your burger or sandwich. You could also use portobello mushroom caps. One caveat though – you’ll need a knife and fork to eat this as the eggplant likely won’t stick together if you try to eat it with your hands.
Taco Sandwich. Take taco night with you to work or school! Just pack your fillings then put them in between or on top of your favorite bread and you’ve got an interesting twist on lunch! Add these Tomato Basil crunchy bean snacks for some extra flavor and crunch!
Chicken Cobb Sandwich. Pack your salad into a sandwich. This spicy chicken cobb sandwich looks pretty mouth-watering and could be a great use of leftover chicken from dinner the night before!
Vegan Collard Green Wrap. Wrap it up in vitamin and fiber-rich collard greens. These leaves are thick and sturdy so don’t be afraid to add in a selection of veggies or even meat for a non-vegan version. This one here is from our favorite LA vegan restaurant, Cafe Gratitude.
Green Grilled Cheese. Green up your grilled cheese by adding chopped spinach or kale to your cheese, then melt for a gooey mess that has some health benefits too 🙂
Ham & Crispy Cheese. Forget about potato chips – add a little crunch to your ham & cheese sandwich by replacing your cheese slices with pure natural parmesan crisps.
