Why We Love It: This chip is a crunchy potato chip that isn’t too salty and actually tastes like real food. It is made with purple heirloom potatoes, which hail from Peru (they were once reserved for Inca kings) and are full of antioxidants. These chips are also unique because they are fried in coconut oil rather than synthetic vegetable oils. Meet the Makers: Founded by Megan Reamer and her family in Crested Butte, CO, Jackson’s Honest was named after Megan’s son Jackson, and it was founded with a mission: to re-introduce healthy fats into the American food chain. Megan and her husband started experimenting with a nutrient-dense diet of healthy fats and proteins as a last resort to nourish then 4-year old Jackson, who was suffering from an extremely rare auto-immune condition and had been given a prognosis of 2 weeks to live. When this diet started to help Jackson, they started to take a closer look at the sources of fat in the American diet and initiated a movement, through their Charitable Foundation, to spread the word about the benefits of healthy fats. They also received rave reviews from friends and family on the coconut oil potato chips they were making at home, and so decided to sell them to the public as a way to re-introduce healthy fats into America’s most popular snack food! Fun Fact: Jackson’s Honest chips are made using low-temperature frying, taking almost 10 times longer than other chips. This helps keep the molecular integrity of the coconut oil intact.
