Why We Love It: It’s a gluten-free tortilla that doesn’t break when you bend it! This tortilla, made from potatoes, is pliable as pliable gets, making it so much easier to wrap up whatever taco fixings your heart desires. The flavor, when eaten by itself, does taste of potatoes but it’s subtle enough that as soon as you fill your taco with fillings then the potato taste goes away. But I actually enjoyed the potato flavor. We also tasted the sweet potato flavor that is coming out soon and that tasted quite different (a little nutty and more subtle), but still has that great moist texture. We also love that they include other nutrient-dense ingredients like garbanzo bean flour and cassava flour, and that they send out each batch to verify that their tortillas contain <5ppm of gluten, making it safe for celiacs. Their facility is also nut-free, making this an all-around allergy-friendly food! Our only complaint is we wish they were a little bigger so they could double as a wrap!
Meet the Makers: Based in San Diego, CA, Potapas was founded by food scientist Jim Broussalian three years ago. Having led menu development for some big fast food joints (including Taco Bell), Jim was disappointed in the offerings for gluten-free consumers looking for quality, healthy tacos, and so decided to start experimenting with recipes. Potapas has been growing and finding homes in big retailers since it’s birth (including Sprouts) and is now launching its second flavor, sweet potato tortillas. www.potapas.com
Fun Fact: Jim finalized the recipe for Potapas after over 200 trials in his kitchen, then he had them tested at Wahoo’s Fish Tacos restaurants in San Diego to make sure the tortillas could withstand restaurant handling!
