DON’T FREAK OUT. I have to admit I did a little bit before making this, but it turned out that I had no reason to. This raw vegan gluten-free chocolate pudding is smooth, creamy, chocolate-y, and HEALTHY. I mean super healthy. Avocados are a good source of fiber, potassium, and vitamins C,K, folate, and B6, not to mention full of heart-healthy unsaturated fat. Yes, the ingredient list of this recipe is a little unconventional, but I promise, the flavors all blend together to create a seamless chocolate pudding that takes about 5 minutes flat to make. Top it off with your favorite gluten-free granola, and you’ve got yourself a satisfying, vegan dessert. And it’s really yummy cold.
I made 2 alterations to the recipe: 1) I couldn’t find Nama unpasteurized raw soy sauce, so I used gluten-free tamari instead. Note this substitution makes the recipe not 100% raw. 2) I added about 1/4 teaspoon of vanilla, which added a little more depth and sweetness. Also, I’m not a fan of agave (here’s why) so I just used maple syrup. The recipe calls for 1/2 cup, but this makes it just a tad too sweet for me, so I decreased the quantity by a little bit. If you like your pudding on the sweet side, I’d stick with the original recipe. If not, I’d suggest using somewhere between 1/4 cup and 1/2 cup.

RECIPE (yes it really is this easy):
2 large avocados
½ cup maple syrup
½ cup cocoa powder
3 tablespoons coconut oil
1/2 teaspoon balsamic
1/2 teaspoon Nama shoyu
¼ teaspoon salt
1/4 teaspoon vanilla
PROCESS: Blend all ingredients in a food processor. Enjoy as is, or freeze until cold!
