3-Ingredient Oat Bran Pancakes (GF, V, SF)

Oat bran is one of my favorite breakfast foods. Yes I know it may sound like something your grandma eats, but did you know that one serving contains 6g of fiber and 7g of protein? That’s more than regular rolled oats, and more protein than an egg! These 3-ingredient hearty pancakes just use oat bran, a banana, and milk. If you don’t have a perfectly ripe banana (a few spots are optimal) a great trick is to zap the banana you do have in the microwave for 15 seconds. I like to add vanilla, cinnamon and nutmeg to the batter for extra flavor, and I recommend topping with a touch of maple syrup and your favorite fruit. Enjoy!

Ingredients (makes 2 pancakes)

3/4 cup oat bran
1/2 cup almond milk (or your favorite milk or milk alternative)
1/2 ripe banana, cut into thick slices
Oil to coat pan
optional: cinnamon, nutmeg, vanilla extract


  1. Pulse all the ingredients in a food processor until until a smooth batter forms
  2. Heat oil (I prefer coconut oil) in a small pan on medium heat
  3. Using 1/4 cup measuring cup, add pancake batter to prepared pan and cook 1-2 minutes before flipping. Cook additional 2 minutes on other side while pressing with your spatula to flatten the pancake
  4. Serve with syrup, fresh fruit or other toppings such as coconut, dried fruit, nuts, nut butter etc.
